Fall is finally here, and you know what that means – Pumpkin Spice Lattes, chunky sweaters, another rewatch of the entire “Gilmore Girls” series, and baking! This coffee pumpkin bread is probably my all time favorite fall recipe. It combines three of my favorite things – pumpkin, chocolate and coffee! It’s so rich but oh so good! You seriously need to drop everything you’re doing and make this right now. Believe me, you won’t regret it 🙂
Coffee Pumpkin Bread with Coffee Icing Recipe
1 14-ounce package pumpkin quick bread mix
1 1/4 cups brewed coffee, cooled and divided
1 cup chocolate chunks
3 cups confectioners’ sugar
2 tablespoons butter or margarine, melted
Prepare bread batter as directed on the package, substituting 1 cup of the coffee for the water. Stir in chocolate.
Bake bread as directed on the package. Remove from the pan; cool completely.
Beat sugar, remaining 1/4 cup coffee and butter in a large bowl with an electric mixer on low speed until well blended. Spread on the bread.
